Road cycling for me. You can do it whichever way you want - competitive, social group or solo and get hold of a turbo / smart bike so you can do it indoors when the weather's bad or you're time limited. Big indoor communities on Zwift etc.

Infinite targets you can set whether against yourself or others. A lot of pros post their data too so you can feel totally humiliated when you see the amazing power they can turn out.

I'd always enjoyed casually riding around but properly got into it by getting a cheapish bike one Christmas with the aim of riding Lands End to John O'Groats the following summer, which I did.

Things just went from there. Always plenty of new tech and kit to spend your hard earned on. Anyone who takes it up quickly finds out that the correct number of bikes to own is n+1 where n is the number of bikes currently owned.
