The best performance I have ever seen by an individual player in a match is either Dan Carter vs Lions 05 (hat trick) or Carter vs Ireland in 2010. In 05 he just destroyed the Lions in both attack and defence and against Ireland he ruled the match completely with his kicking from hand and running his backline.

I have about three.

Daniel Carter 2005 second Lions Test.
Jonah Lomu 1995 World Cup Semi Final
Joe Rokocoko 2003 Second Bledisloe Cup Match

Sean O Brien Vs Ulster this season.
Brian O'Driscoll Vs France the day of his Hatrick.
Rocky Elsom Vs Leicster Heineken cup final.
Lomu Vs England 95

Dan Carter - 2005 Lions Tour

I've never seen an individual display such a master class in every rugby skill consistently against the best Europe had to offer. And he was only what.. 23.. 24???

Contepomi vs Toulouse
BO'D vs France
Not at same level but still admirible were Kearney vs South Africa 2nd test and for Ireland.

Kearney did beat SA single handedly for Ireland (Sexton's boot helped but Kearney shut us off).

It has to be Carter vs the Lions '05 though; the performances have been unrivaled IMO and the stage cannot get much higher as well.

O'Connell were immense aswell learning Affrikaans and getting loads of turnovers vs the best lineout in the world. Since the boks' game is so based on kicking you were pretty much screwed. Couldn't kick to touch or down the middle.

You mean 0?
According to ESPN he stole no lineouts, with Ferris stealing one:

I remember him stealing a few anyway He did play well that day and he runs the Irish lineout so any steals that weren't from overthrows were probably down to him. Also it says and I quote "great work by O'Connell as he gets a hand in front of Matfield and Ireland steal the ball"

I'd say he got a few steals, just not clean ones because it says Ireland got 4 steals but ferris is the only one to be awarded a steal in the Ireland stats.

Scared the hell out of Smit anyway as he was penalised for taking too long at a throw.

Jeff Wilson, Otago v Wellington 1997.
Ben Smith, Otago v Waikato 2009.

At an international level it's hard to go past Carter against the Lions in 2005. Lomu in the '95 World Cup is another one, and not just the semi-final v England. I remember him being equally impressive (if not more impressive) in the AB's first pool match against Ireland.

O'Driscoll v England 09....drop goal and a try after being hit without the ball twice...unreal stuff

Johnny Sexton this year against England and The Saints were both unbelievable, not the best though.

Lomu- NZ v Eng '95 RWC.

He singlehandedly took rugby to another level globally with his performance in that game.

That kind of impact and influence will never be seen again IMO.
No-one else comes close.
