well on the ps2 version, you have to move the left analog stick down a bit, not all the way down  (half way'ish) then the middle jumper button then hold the left analog stick all the way up, not sure how its done on PC

to soccer kick you hold the grubber kick button (triangle) and run over the ball to sort of speak i assume its the same for the pc
